This makes a beautiful centrepiece for a relaxed dinner party but you could also make four individual galettes, which would be great for a very stylish picnic. Use this recipe as your staring point and adapt your filling according to what’s in season or available.
In a large bowl, mix together the flour, thyme and salt. Add the cold diced butter and rub it in to the flour using your fingertips – it doesn’t need to be too fine, you still want to see small pebbles of butter throughout. You can also do this by pulsing everything in a food processor.
