This is a great dish for a dinner party and, in the unlikely event you have any left over, tastes totally fantastic the next day. I didn’t think I could improve this recipe but then I came up with the idea of adding a crunchy topping, which finishes it off beautifully. Ideally use stale bread for this – if it isn’t stale, just dry it out in the oven beforehand. I serve this on its own with garlic bread, but it also makes a delicious accompaniment to meat or fish.
