Parlour Baked Cheesecake

This is a classic baked cheesecake, made a bit fresher with the addition of some sharp yoghurt and a touch of lemon juice. It serves six to eight, but it’s very easy to double up and make for a big party. Just use a slightly bigger tin (25cm is about right), and use the same quantities for the base ingredients but double up for the filling.
