I love this cake because it’s light and not too sweet, and the almond flour gives it a wonderful, moist texture. It’s a real favourite at Cambo with a mid-morning coffee.
Cream the butter and sugar together until light and fluffy, then break in the egg and beat well to combine. Stir in the ground almonds, almond extract and cinnamon, and then swiftly fold in the sifted flour and baking powder
