Beetroot gives this cake a wonderful dark colour, a rich flavour and a beautiful moistness. It tastes amazing but surely it’s good for you too?
Boil the beetroot in water until it’s tender to the point of a knife, about 30 minutes. Drain and allow it to cool, then remove the skin and coarsely grate the beetroot.
