Carrot Cake with Cream Cheese Icing

The Yellow Door Bakery in Dundee sadly no longer exists, but I still make this wonderful cake of theirs. Once iced, you need to store the cake (or muffins) in a tin in the fridge, but it will keep for up to five days. I decorated the cake in the picture to the hilt with orange slices, marigold petals, nasturtium flowers, rosemary and sunflower seeds.
