Our elderflower spritz is incredibly popular in the summer at Cambo – we use our own elderflower cordial topped up with cold sparkling water and we make it look beautiful by garnishing it with cucumber, fresh mint and nasturtium flowers. It’s the perfect cooler for drinking in the gardens. Citric acid can be hard to find these days – try online, or often Asian grocers will stock it – but it is an important addition as it cuts through the sweetness and it helps preserve the cordial.
