We’re lucky to have many different varieties of mint growing at Cambo – chocolate mint, pineapple mint, grapefruit mint and spearmint – and they are all really great in a mojito. I make mint cordial and add it to rum with some crushed, fresh mint leaves, then top it all up with sparkling water. Without the rum, mint cordial is incredibly refreshing on a summer’s day with a nice generous slice of cucumber and sparkling or still water.
