My fail-safe dressing – perfect on a green salad or tossed through warm new potatoes. Vegans can swap out the honey and use maple syrup instead.
Put the vinegar, lemon juice, garlic, mustard and honey or maple syrup into a bowl and whisk together or add to a screw-top jar and shake well to combine. Taste and add salt and pepper as you think it needs it, then pour in the olive oil and whisk or shake again until the dressing emulsifies. This keeps in the fridge for a good few days, but let it come up to room temperature and whisk or shake
