I love making this sauce. It requires just minimal whisking and comes together like magic. Drizzle it over salads, roasted vegetables, white fish or anything else that needs a tangy flavour boost – I wouldn’t eat a falafel without it! Make sure you give the tahini paste a good stir before you measure it out.

Ingredients

  • 100 g tahini paste
  • 60 ml lemon juice
  • 2 garlic clove

Method

Add the tahini paste, lemon juice, garlic and salt to a large, preferably stainless steel, bowl and whisk slowly by hand. When it starts to thicken, add a little iced water and continue to whisk. It will really thicken up and appear as if split but that’s all good. Gradually add a little more water and whisk until it is pouring consistency and coats the back of a spoon.
