I love beetroot ketchup. I like to use roasted, whole, fresh beetroot for this and I just chuck them in the oven whenever I have it on, but cooked beetroot from a packet works well too. This is really nice with a little Sichuan pepper or Chinese 5 spice. Amazing with Vegan Sausage Rolls.
Any vinegar will do but an apple cider vinegar works really nicely.
