This is the basic pickling liquid needed to make Pickled Red Onion and Pickled Red Cabbage, but it works beautifully with any veg. Try it with ribbons of carrot, cauliflower florets, sliced radishes or cucumber or even a mix. I like quite a sweet pickle, and I suggest using white wine vinegar but you can use any kind you like.
Put the vinegar, sugar and salt into a pot with 125ml water and the remaining ingredients. Bring to a simmer until the sugar has dissolved.
