A favourite of mine in the summer, strawberries and meringue make a light, vibrant and delicious topping for pancakes. Strawberries are a Scottish-grown treasure in the summertime and this is my favourite way to enjoy them.

Ingredients

  • 3 egg whites
  • 300 g caster sugar
  • 200 g

Method

  1. Preheat the oven to 120°C/100°C fan.
  2. Put the egg whites into a scrupulously clean mixing bowl along with 150g of the caster sugar. With a handheld electric mixer, whisk vigorously until you get a fluffy ‘soft peaks’ consistency – you sho
