We are very lucky to be able to source wild venison so easily here on Skye. We regularly work with Ross Macrae, who has his own deer larder in the north of the island. He controls excessive deer numbers, butchers them and distributes the venison to locals and nearby businesses. Cooking with local venison is a privilege and you can really taste the difference in quality when eating it.
