These sell like hotcakes from our baking counter because they make such a tasty and filling lunchtime meal.

It might seem extravagant, but when I make any chicken filling I always use a whole roasted chicken instead of just a breast or thigh. When cooked on the bone, chicken is way more flavoursome and juicy, making it perfect for a sandwich. You can of course use leftover chicken from a roast the night before, then use the bones to make Bone Broth
