This rich chocolate cake is a variation of Mississippi mud pie, a sticky dessert baked in a pie shell. The cake tastes good served, as you would serve the pie, with a scoop of vanilla ice cream or some whipped cream – or even both. This cake will keep refrigerated for two days.

Ingredients

  • 225 g/8 oz/1 cup butter, plus extra for greasing
  • unsweetened cocoa powder

Method

  1. Preheat the oven to 140°C/275°F/Gas 1. Grease a 25cm/10in round deep cake tin (pan), then dust it lightly with the cocoa powder.
