Because of their brief appearance in the spring, their great flavor, and my garlic addiction, I love having canned scapes on hand to use throughout the year. Pickled scapes are fabulous when added to a sandwich, cut up in a salad, or even tossed into a cocktail as a garnish. I have seen them in abundance at farmers’ markets around the states, and occasionally, even at the grocery store.
