These tasty squash bites are great as a stand-alone snack and taste delicious blended up in a smoothie, diced up in a fruit salad, or served with fish.

Ingredients

  • cups cubed butternut squash, skin removed
  • 2 whole cinnamon sticks

Method

Fill a quart-sized jar with the cubed squash. Fit the cinnamon sticks in with the cubes, and try to wedge them in so they do not float to the top. Pour the brine over the squash until it covers them. If the squash will not stay under the brine on their own, add a weight to hold them down. Cover the jar with a cheesecloth or other breathable cover to keep dust and bugs from entering the ferment.
