Shrubs are essentially fruit syrups that are mixed with vinegars to create a delicious base that can be mixed with water, carbonated water, or used as a cocktail mixer. Here is one of my favorite shrubs to make at home, but this method can be applied to pretty much any fruit and herb.

Wash peaches, cut away any bruised or flawed areas, and remove pits. Combine peaches with sugar or other natural sweetener of choice and mix well. Add mixture to a quart jar and cover with canning jar lid and ring tightly. Leave the jar on the counter at room temperature and allow the fruit to macerate for 3 to 4 days (out of direct sunlight), until the natural juices from the peach dissolve th
