Northern appalachia has long been a center of Italian-immigrant culture. Italians came to West Virginia in the early 1900s to do handwork in the coal mines, and before World War I there were so many of them in the state that the Italian government maintained a consulate office here. Many of the miners left the region when they’d saved up enough to leave the coalfields, but many of them stayed, and there’s a wealth of culinary evidence of the Italian presence here.
