Is there anything better than chiles rellenos? No, probably not. I am a real sucker for the traditional New Mexico–style egg-white-puffy battered ones stuffed with strips of Jack cheese like my mom makes, but I actually might prefer lighter renditions like this one, which is neither battered nor fried, but simply filled with fluffy rice, cubes of cuminy squash, and lots of cilantro; it does feature Mom’s signature tomato sauce, complete with the whole spices that so annoyed me as a kid.
