Use any kind of tea you’d like! I’ve especially enjoyed jellies made with oolong and Earl Grey, but the possibilities are endless. Serve this jelly with toast or English muffins for breakfast or with your afternoon tea (preferably the same kind as the jelly).

Ingredients

  • 6 tablespoons loose tea leaves
  • cups boiling water
  • 3 cups

Method

Prepare for water-bath canning: Sterilize the jars and keep them hot in the canning pot, put a small plate in the freezer, and put the flat lids in a heatproof bowl. (details.)

Put the tea leaves in a heatproof bowl and pour in the boiling water. Let steep for 5 minutes, then pour through a fine-mesh sieve into a 6- to 8-quart preser
