The lime-lemon conundrum that’s a big part of interpreting indian pickle recipes can give one fits. As far as I can gather, in India limes are smaller and perhaps juicier than the standard Persian limes sold here in the United States. I’ve tried to make lime pickle with US limes, but they’ve been about as delicious as that edible-only-by-me “Shaker lime pie” Derek has never let me live down. Use lemons.
