These are most often called won ton, but the Cantonese pronunciation is won tun. The words literally mean “swallowing a cloud” and denote lightness. In the city of Canton, around midnight, young men sent by restaurants walk the streets hitting pieces of bamboo together, and the “tok tik” sounds indicate that midnight won tun snack time is at hand. I remember we used to lean out of our windows and give our orders, which were later delivered.
