The Chinese regard the green broccoli flowers as a symbol of jade, and jade itself as a symbol of youth and rebirth. Broccoli therefore is served at virtually every New Year meal and at birthday meals. What better thoughts to have about a salad?


  • 8 cups water
  • 2 slices ginger, ¼-inch thi


  1. In a large saucepan, combine the 8 cups of water, the ginger slices, 2 of the garlic cloves, and the baking soda. Bring to a boil over high heat. Add the broccoli and cook until it turns bright emerald green, about 2 minutes. Drain and rinse under cold running water. Drain well
