These pickled pears are very popular during the summer months. Many different kinds of pears grow in Canton and throughout China. For pickling, only the pear called sah leh, or “sand pear,” is used. It is almost round, almost apple-shaped, and has a consistency quite like the Bosc pear, with skin like it as well. So for this recipe use Bosc pears.
