This is the most famous of Chiu Chow preparations and is based on the Chiu Chow Stock and cooked fettucini-like rice noodles called guor tiu, or “rice sticks.” The best of these noodles are made in Thailand and come dried, in packages, labeled “Rice Noodles, Banh Pho.” This soup is inexpensive and hearty and is the luncheon of choice of virtually all the Chiu Chow people.
