This light-textured, curried meat loaf topped with a golden savoury custard is one of the most well-known Malay dishes.


  • 2 slices stale white bread water
  • 30 ml sunflower oil

Soak bread in water for 10 minutes, then squeeze dry. Heat oil in a large saucepan and braise onion until golden, 5–10 minutes. Add garlic, spices, salt and steak mince, and cook, covered, for about 15 minutes. Add lemon juice, raisins and sugar, and cook to combine well, about 10 minutes. Remove from heat, add bread and egg and mix well.
