A delicious baked lemon pudding. Decorate with lemon leaves before baking for extra flavour.


  • 100 g butter
  • 100 g castor sugar
  • 2 extra-large eggs<


Beat butter and castor sugar until light and creamy, then beat in yolks until well combined. Sift flour and salt together. Beat egg whites until stiff peaks form. Fold flour into yolk mixture with lemon rind and juice and 250 ml milk. Fold egg whites in lightly, then stir in remaining milk.
