Plantains are like overgrown bananas but should be cooked. They are ripe when the skins are very mottled or black. Unripe (or green) plantains can also be fried but are not sweet. Twice-fried green plantains are called tostones, banane pese or patacones and are pressed flat before re-frying. Boiled ground provisions are good with butter or gravy.
