Method

This vegetable is also popular as a salad in Martinique. For Christophene en Salade (Chayote Salad), peel 2 large chayotes and cut lengthwise into 4 pieces. Do not remove edible seed. Boil in salted water for 20 minutes, or until tender. Drain thoroughly and when cool cut into ½
