  • pints water
  • 1 tablespoon salt
  • 8 oz.

Method

Bring the water and salt to a rolling boil, pour in the corn meal in a slow, steady stream and cook, stirring, over medium heat until the corn meal is thick and smooth, about 5 minutes. Beat in the butter, and turn out on to a warmed serving dish.
