Method

Cook the hearts of palm as in the recipe for Palmito Guisado. Lightly beat 6 eggs and scramble them into the palm hearts mixture. Cook just long enough for the eggs to set, stirring with a wooden spoon to reach the entire surface of the pan, about 3 or 4 minutes.
