If there is a multipurpose gravy in the Caribbean, it’s this sauce. It’s similar to Onion Gravy, but the tomato paste gives it a bright orange color. It’s terrific on Cou-Cou.
Heat the margarine in a large saucepan over low heat. Add the tomatoes and onions and sauté until the tomatoes begin to release their juice and the onions start to become translucent.
Add the garlic, raise the heat to medium, and cook for 3 minutes.
Stir in the pepper, paprika, and curry powder, then stir in the water and tomato paste. Cook for 5 minutes
