This departure from traditional coleslaw uses grated coconut instead of cabbage. Mayonnaise isn’t needed because the coconut will produce its own cream. What you are left with is a cool, high-vitamin take on coleslaw. Carrots are optional and the recipe is very flexible so you can tweak it to fit your own tastes. Another coleslaw alternative, made in the Rastafarian community, uses seasoned coconut milk instead of the mayo.
