In this side dish, okra is cooked in a sofrito-type sauce, characterized by onion, garlic, bell pepper, and tomato. This dish makes a nice accompaniment to a veggie burger, or serve it with hot white rice.
Heat the oil in a saucepan over medium heat. Add the okra and sauté for 3 minutes, until lightly browned. Remove half of the okra and set aside. Add the onion, garlic, tomatoes, Holiday “Ham,” bell pepper, Scotch bonnet, and liquid smoke. Sauté for 2 minutes, then turn down the heat to low and sauté for 2 more minutes. Stir in the water, tomato sauce, liquid aminos, parsley, thyme, salt, white
