Rock Cakes

Like their name suggests, these cakes are hard like a rock. They are somewhat similar to scones but vary as they are made using the creaming method, while scones are made by rubbing the fat into the flour. Rock cakes are sold in bakeries and, on some islands, in rum shops. They are especially nice with Basil Tea.
