Ingredients: 4 cups (400 g) finely grated fresh coconut, or 3 cups (400 g) frozen grated coconut, thawed; 1 teaspoon molasses, optional; 1½ teaspoons Ener-G egg replacer; 1 tablespoon almond essence, or 1½ teaspoons almond extract; ⅓ cup plus 1 teaspoon (85 g) vegan margarine; 2 tablespoons warm water; ⅓ cup plus 1 teaspoon (85 g) vegetable shortening; 1 teaspoon ground nutmeg; 1 tablespoon baking powder; 1 cup (200 g) light brown sugar; 4½ cups (565 g) unbleached all-purpose flour (see Island Tips); ⅓ cup (50 g) raisins, chopped candied cherries (see Island Tips), or a combination, optional; ¾ cup plus 1 tablespoon (195 ml) nondairy milk; 1 teaspoon ground cinnamon or cassia; 2 teaspoons granulated sugar dissolved in ¼ cup (60 ml) water
