This tea is hot hibiscus, also known as sorrel in the Caribbean, some spices, and a sweetener. Although I’m a big fan of sugar-free tea, the sorrel is so tart there must be some sweetness to balance it. This is a great stand-in for a fruity tea.

Method

Place the water, hibiscus, star anise, cinnamon, and orange peel in a heavy medium saucepan over medium-high heat and bring to a boil. Stir in the sugar and boil 5 minutes. Strain the tea and serve hot.
