A very common way of having this tea in the Caribbean is to serve it with cream. If you can find a good nondairy creamer, try it in this recipe, omitting the lime juice.
Put the water and ginger in a small saucepan and boil for 5 minutes; alternatively, bring the water to a boil, pour it over the ginger, cover, and steep for 30 minutes to an hour. Strain, add the lime juice, and sweeten to taste. Reheat if necessary.
