On some islands, lemongrass grows wild. When you drive through the countryside on these islands, the smell of lemongrass pervades the atmosphere, which is quite delightful. This tea can also be served cold, as an iced tea.
Put the lemongrass and water in a small saucepan and boil for 5 minutes; alternatively, bring the water to a boil, pour it over the lemongrass, cover, and steep for 30 minutes to 1 hour. Strain, then sweeten to taste. Reheat if necessary.
