This cake shows the versatility of breadfruit as an egg replacer. This cake is very rich, and the breadfruit imparts a slightly nutty flavor.


  • 1 cup (240 ml) nondairy milk
  • 1 tablespoon apple cider vinegar or


  1. Preheat oven to 350°F (180°C) and grease an 8 × 8-inch (20 × 20 cm) cake pan.
  2. Mix the milk with the vinegar and set aside to form vegan buttermilk.
  3. Cream the shortening and sugar in a medium bowl, until most of the sugar crystals have dissolved.
