Ingredients: ½ cup (115 g) vegetable shortening; 1 tablespoon apple cider vinegar or distilled white vinegar; ½ teaspoon ground nutmeg; ½ teaspoon ground cinnamon; ½ teaspoon pink or sea salt; ½ teaspoon blackstrap molasses; 2 tablespoons agave nectar, optional; 1½ teaspoons vanilla essence; 1 scant teaspoon baking soda; 1 cup (220 g) cooked breadfruit mashed with a little nondairy milk, cooled; ½ cup (100 g) light brown sugar; 2 teaspoons baking powder; 1 cup (125 g) cake flour; 1 cup (125 g) unbleached all-purpose flour; 1 cup (240 ml) nondairy milk

Method

Preheat oven to 350°F (180°C) and grease an 8 × 8-inch (20 × 20 cm) cake pan.
Mix the milk with the vinegar and set aside to form vegan buttermilk.
Cream the shortening and sugar in a medium bowl, until most of the sugar crystals have dissolved.
