Method

  1. Put the coconut milk, sugar, almond essence, bitters, nutmeg, and optional coconut in a heavy saucepan over low heat and bring to a gentle simmer. Increase the heat to medium-low. Add 1 teaspoon of the agar and cook, stirring constantly, for 5 minutes, until it thickens slightly.
