This is a cold dessert that is set with agar. With its velvet texture and light flavor this is a perfect dessert for a dinner party. Coconut flans are usually offered in restaurants and not usually made at home.

Method

Put the coconut milk, sugar, almond essence, bitters, nutmeg, and optional coconut in a heavy saucepan over low heat and bring to a gentle simmer. Increase the heat to medium-low. Add 1 teaspoon of the agar and cook, stirring constantly, for 5 minutes, until it thickens slightly.
