Many people think of catfish fried in cast iron as the epitome of Southern comfort food. Yet, the appeal has a global reach, as my friend May Fridel, from Kerala, showed me. She’s from a long line of spice merchants, and her Indian spin on this classic is tasty and colorful.

The pieces of fish are briefly marinated in buttermilk and a spice masala, then dusted with rice flour, and quickly fried. The results are crunchy and golden on the outside yet tender inside. Serve them with Ind
