Pissaladières are popular pizza-like snacks in the south of France. Some of the most delicious are made with puff pastry. Although my version isn’t classic, friends love the generous tangle of sautéed onions, sun-dried tomatoes, olives, and minced anchovies baked with the flaky crust on top, like a Tarte Tatin, then flipped before serving. The thin layer of caramel accents the tangy onions and salty anchovies. The tart is best eaten soon after baking.
