Whether you call them latkes or röstis— a Swiss specialty—or just potato pancakes, shredded and fried potatoes have many fans. Here I use sweet potatoes or yams (I prefer the latter), hazelnuts, and shallots for a scrumptious side dish. Unlike the Zucchini Pancakes, these should be cooked soon after the ingredients are mixed.
