Many vegetables other than potatoes can be shredded and fried into tasty pancakes. I particularly like this combination of zucchini, scallions, dill, oregano, feta, and pine nuts. It reminds me of a pancake-like hors d’oeuvre called mücver that I’ve eaten on several occasions in Turkey. Serve the pancakes with a dab of Red Pepper–Yogurt Sauce or simply, as Turks do, with plain yogurt on top, either as a side dish or a nibble before a meal.
