This homey recipe was given to my friend Sarah Collins by her mother, Elizabeth French, who called it “Man Size Stew.” But Sarah remembers that everyone in her family—not just her dad—loved it, so she renamed it Vintage Beef Stew because flavorful home cooking appeals to almost all of us. If time is short, the beef can be braised separately, refrigerated in its broth, and reheated later when you can add the vegetables to finish the stew.
