I love steak that is crunchy on the outside and deep pink inside. While the steak sears in your grill pan, the stout-brown sugar marinade reduces over mounds of sautéed onions into a caramelized glaze. Served together, they are a sublime treat. This recipe is easily doubled.
Combine the stout, brown sugar, vinegar, garlic, and bay leaf in a resealable plastic bag; add the steak and let it sit for at least 1 hour, turning after ½ hour. (The meat may marinate for several hours.)
In the meantime, melt the butter and oil in a large skillet over medium-high heat. Add the onions and sauté them until golden brown, 12 to 15 minutes, stirring often. Set aside.
