Cast-iron fried catfish is the epitome of Southern cooking. These fillets are super-crunchy and golden on the outside, yet tender inside thanks to a quick bath in buttermilk. You can cook other flat white fish this way, too. Serve the fillets with Glazed Butternut Squash and sautéed greens, like collards or dandelions.
